| ASSORTMENTS:
Kneading Time : 20 - 25 mins. (classical kneader) 5 - 6 mins. (spiral kneader) Dough Temperature : 23-25 ˚C Add wet yeast to VIZYON Premium Bread Mix and knead the mixture with water additions until the dough reaches desired texture. The dough temperature should be 23 -25˚C after kneading for good fermentation. Rest the kneaded dough for 8-10 mins in first fermentation. Cut the dough in small pieces in desired amount. Roll the dough pieces and rest them for 3-4 mins in midde fermentation. Leave the dough in 30-35 ˚C and %75-80 rh for fermentation for 35-40 minutes in summer time and for 50-60 minutes in other times. After the fermentation;

Deck Oven : 200-210˚C , 25-30 mins. Rotary Oven : 240-250˚C , 18-20 mins
